Saffron is derived from the dried stigmas of the saffron crocus and has a deep red colour and sweet flavour. Saffron gives a distinctive aroma, flavour and a brilliant yellow colour to paella, risotto and rice. It is also a classic ingredient in the French fish soup Bouillabaisse.
